I bet you are convinced that often times desserts will make you feel guilty of eating an unhealthy food again. Don’t worry, you are not alone – we all are. That feeling when you wished the dessert you have just eaten is healthy, and asked why it has to be unhealthy.
I have had that feeling almost every time before – yes, just before. Nowadays, I have been venturing my mind over some of dessert recipes that are of course very delicious, yet, healthy. I have discovered some, and one of the best I have learned is this ultimate temptation – “The No Bake Raspberry Chocolate Tart”.
Then again take note; this recipe is absolutely guilt-free. Why? This is a paleo recipe, meaning, every single ingredient used are all healthy – and again, delicious too.
The No Bake Raspberry Chocolate Tart
Chocolates, sounds unhealthy. Well, it actually depends on which ingredients you use to make the chocolates. This time, the chocolates are made up of almond flour and cocoa powder, no sugar. And the star of this recipe – berries. Berries are so tasty you will want to eat it every day, though the good news is you actually can. Not yet convinced? Let this entire list of ingredients explain to you why this recipe is both paleo and vegan:
For the crust: ½ cups almond flour, ½ cup sugar-free cocoa powder, ¼ cup of melted coconut oil, 1 tbsp of maple syrup, sea salt.
And for the filling: ½ cup of canned coconut milk, finely chopped of 6 ounces of bittersweet chocolates, ¼ cup of preserved raspberries, 2 cups of Driscoll’s Raspberries.
First is to grease a tart pan with coconut oil, then mix all the crust ingredients you have prepared and stir evenly on this tart pan forming your crust. Next is to prepare a large bowl and place the finely chopped chocolates on it. Prepare a saucepan and heat the coconut milk with it, then remove as soon as it boils.
Pour the hot coconut milk into the chopped chocolates, then leave for about a minute. After a minute, add the raspberry preserves and stir the whole mixture until it is creamy. Pour the mixture at the top of the crust you prepared, then garnish it with raspberries on top. Enjoy the taste, guilt-free.
